Marinated Mozzarella Pizzas
- 1/4 cup vegetable or olive oil
- 2 tsp finely grated lemon peel
- 1/4 cup lemon juice
- 1 tsp dried basil leaves
- 1 tub (8 oz) small mozzarella balls, drained
- 4 small whole wheat pita breads
- 4 oz drained sun-dried tomatoes packed in oil
- 1 clove garlic
- 2 medium tomatoes, sliced
- 2 oz baby arugula leaves
- Whisk oil, lemon peel and juice, and basil in a medium bowl. Add mozzarella balls; toss to coat. Cover and refrigerate 2 hours to marinate, stirring occasionally.
- Preheat the oven to 400u0b0F. Place pita breads on a large baking sheet. Process sun-dried tomatoes and garlic in a small food processor until smooth. Spread mixture evenly on each pita. Top with tomato slices and season.
- Drain mozzarella, reserving the marinade. Slice mozzarella and divide among pitas. Drizzle with a little reserved marinade.
- Bake 10-15 mins or until golden brown and crisp. Serve topped with the arugula. Drizzle with a little more reserved marinade.
