Marinated Mozzarella Pizzas

  1. Whisk oil, lemon peel and juice, and basil in a medium bowl. Add mozzarella balls; toss to coat. Cover and refrigerate 2 hours to marinate, stirring occasionally.
  2. Preheat the oven to 400u0b0F. Place pita breads on a large baking sheet. Process sun-dried tomatoes and garlic in a small food processor until smooth. Spread mixture evenly on each pita. Top with tomato slices and season.
  3. Drain mozzarella, reserving the marinade. Slice mozzarella and divide among pitas. Drizzle with a little reserved marinade.
  4. Bake 10-15 mins or until golden brown and crisp. Serve topped with the arugula. Drizzle with a little more reserved marinade.
