Honey Pork Chops With Apple Cabbage Salad
- 1/4 cup light soy sauce
- 2 tbsp honey
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 2 cloves garlic, crushed
- 1/2 tsp ground cloves
- 4 None pork chops (about 6 oz each)
- None None FOR THE APPLE CABBAGE SALAD
- 4 cups thinly sliced cabbage
- 1/2 cup raisins
- 1/2 cup walnuts, toasted
- 1 medium apple, cored and thinly sliced
- 1/2 tsp caraway seeds
- 1/4 cup cider vinegar
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Combine soy sauce, honey, lemon juice, 1 tbsp of the oil, garlic and cloves in large bowl. Add pork and turn to coat. Cover. Refrigerate for 3 hours or overnight.
- For the apple cabbage salad, combine all ingredients in a large bowl.
- Heat remaining 1 tbsp oil in large skillet on medium-high heat. Cook drained pork, in batches, until cooked through and browned on both sides. Serve with salad.
