Tia Lola'S Casserole
- 1 whole chicken or 3 breasts of chicken
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 12 oz. Cheddar cheese or more
- 1 small can tomato sauce
- 14 corn tortillas
- 2 small cans Ortega chilies
- chopped olives (optional)
- Boil the chicken until tender; then take out skin, bone and fat.
- Shred meat.
- Cut tortillas in 4 strips.
- Grate cheese.
- Mix enough water with the cans of soup to make consistency of a thick sauce.
- Divide ingredients in thirds to make 3 complete layers. First, cover bottom of 9 x 13-inch pan with 1/2 cup soup. Assemble by completely covering bottom with a layer of tortillas, followed by soup, chicken, tomato, chilies and cheese in that order.
- Then do the following two layers similarly.
chicken, cream of mushroom soup, cream of chicken soup, cheddar cheese, tomato sauce, corn tortillas, chilies, olives
