Grilled Turkey With Onions And Peppers
- 2 tsp paprika
- 1/2 tsp salt
- 4 lbs turkey cutlets
- 1 None bird's-eye chili, deseeded, thinly sliced
- 1 tbsp olive oil
- 1/4 cup lime or lemon juice
- 1 None red onion, cut into thin rings
- 1 None red pepper, deseeded, cut into thin rings
- None None fresh cilantro sprigs, to garnish
- Rub paprika and salt on turkey. Place in a bowl. For the marinade, combine chili pepper with olive oil and half the lime or lemon juice. Pour on turkey, cover and refrigerate 4 hours or overnight, turning once or twice.
- Preheat grill to medium-high. Grill turkey 8 mins, brushing with marinade and turning, until cooked through.
- Toss onion in remaining lime or lemon juice. Arrange turkey on a platter and sprinkle with peppers, onion, cilantro and lime or lemon juice. Serve hot or at room temperature.
