Oven-Baked Parmesan Chicken
- 2 None eggs, lightly beaten
- 1 tbsp flour
- 2 cups stale breadcrumbs
- 1/3 cup grated Parmesan cheese
- 2 tbsp finely chopped fresh flat-leaf parsley
- 12 None chicken tenders
- 1/2 cup olive oil
- 1 cup firmly packed fresh basil leaves
- 1/4 cup lemon juice
- 1 clove garlic, quartered
- 3/4 cup pitted kalamata olives
- 8 oz mixed salad leaves
- Preheat the oven to 425u0b0F. Grease a baking pan.
- Combine eggs and flour in medium bowl. In another medium bowl, combine breadcrumbs, cheese and parsley. Coat chicken, one piece at a time, first in egg mixture, then in breadcrumb mixture. Place chicken, in single layer, on prepared pan.
- Bake for 15 mins, or until chicken is lightly browned and cooked through.
- Meanwhile, blend or process oil, basil, lemon juice and garlic until well combined.
- Toss olives and salad in a bowl. Arrange on serving plates with chicken. Drizzle with dressing.
