Baked Gnocchi With Tomato, Basil And Mozzarella
- 3 tbsp oil
- 1 medium onion, diced
- 1 clove garlic, finely chopped
- 6 large tomatoes, diced
- 200 ml vegetable stock
- 2 tbsp tomato paste
- 150 g salami slices, halved
- 400 g gnocchi
- 15 g pine nuts
- 1258 g mozzarella, torn
- 4-5 tsp green pesto
- Heat 2 tbsp oil in a pan and lightly saute the onion and garlic for a few minutes until softened. Add the diced tomatoes, stock and tomato paste. Season with salt and pepper, stir well then cover and simmer for about 10 minutes.
- When cooked, blend into a smooth tomato sauce and season again with salt and pepper if necessary. Heat 1 tbsp oil in a frying pan and pan fry the salami slices for 2-3 minutes then drain on paper towel.
- Heat oven to 400u0b0F. Place the gnocchi, tomato sauce and salami in a baking dish, sprinkle with pine nuts and mozzarella and bake for 12-15 minutes. Remove from oven and dot with pesto.
