Sausage And Vegetable Casserole
- 1 tbsp olive oil
- 6 links sausage
- 1 None onion, chopped
- 2 cloves garlic, minced
- 1 None zucchini, sliced
- 1 None small eggplant, sliced
- 1/2 None green pepper, deseeded, chopped
- 1 (13.5 oz) can chopped tomatoes
- 1 (13.5 oz) can lima beans, drained, rinsed
- 3/4 cup canned sweet corn
- 2 tbsp fresh basil leaves, torn, plus extra to garnish
- 1/2 loaf slightly stale bread, torn
- 2 oz Cheddar cheese, grated
- Preheat oven to 350u0b0F.
- Heat oil in a frying pan over high heat. Cook sausages for 4-5 mins, turning, until cooked through. Drain on paper towels then cut into chunks.
- Add onion and garlic to pan. Saute for 1-2 mins, until just tender. Add zucchini, eggplant and pepper. Cook, stirring, for 2-3 mins. Transfer to a large baking dish along with sausage, tomatoes, beans, corn and basil. Season. Sprinkle with breadcrumbs and cheese. Bake for 25-30 mins, until cheese is golden. Garnish with basil leaves.
