Lamb And Apricot Meatballs With Couscous And Tomato Sauce
- 1 tbsp olive oil
- 1 None red onion, finely chopped
- 4 cloves garlic, crushed
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 lb ground lamb
- 1 oz fresh breadcrumbs
- 8 None dried apricots, finely chopped
- 1 tbsp mint, finely chopped
- 14 oz can diced tomatoes
- 4 oz couscous
- 1 None cucumber, chopped
- None None lemon wedges, to serve
- In a frying pan, heat half oil over medium heat. Saute onion and garlic 3-4 mins, until tender. Add spices and cook 1 min, stirring. Spoon half mixture into a large bowl. Add lamb, breadcrumbs, apricots and mint. Season to taste and mix well. Roll level tablespoons of mixture into balls.
- Heat remaining oil in same pan over medium heat. Cook meatballs 6-8 mins, turning, until evenly browned. Add remaining onion mixture to pan, along with the tomatoes. Simmer 4-5 mins, until meatballs are cooked through completely.
- Meanwhile, prepare couscous according to package instructions. Transfer to a large dish and mix in cucumber. Season to taste and top with meatballs and tomato sauce, to serve. Accompany with lemon wedges.
