Pork Chop Skillet
- 1/4 c. catsup
- 2 Tbsp. lemon juice
- 1 Tbsp. grated onion
- 1 tsp. Worcestershire sauce
- 1/2 tsp. salt
- dash of Tabasco sauce
- 4 lean (1-inch thick) pork chops
- 1 Tbsp. shortening
- 2 large sweet potatoes
- 1/2 c. water
- 2 Tbsp. brown sugar
- 16 prunes
- 16 cloves
- Blend lemon juice, catsup, onion, Worcestershire sauce, salt and Tabasco sauce.
- Pour over pork chops.
- Let stand 1 hour. Drain sauce and the chops and brown lightly in the shortening. Watch closely not to scorch.
- Pare and half the potatoes.
- Blend the catsup mixture with water to cover.
- Pour over pork chops, potatoes and prunes.
- Sprinkle brown sugar over all.
- Cover tightly and cook slowly for 45 minutes.
