Tuna Burgers With Avocado And Corn Salsa
- 2 tbsp olive oil
- 1 None onion, finely chopped
- 2 cloves garlic, minced
- 1/2 tsp chili flakes
- 1 (13.5 oz) can tuna in oil, drained
- 1/3 cup breadcrumbs
- 2 tbsp fresh cilantro leaves
- 1 None egg
- None None FOR THE SALSA
- 3/4 cup canned creamed corn
- 1 None small avocado, pitted, peeled, chopped
- 1 None small tomato, finely chopped
- 2 tbsp fresh cilantro, chopped
- 1 None red chili, deseeded, finely chopped
- 1/2 None lemon, juiced
- 2 1/2 cups baby arugula, to serve
- 4 None burger buns, toasted, to serve
- Heat 1 tbsp oil in a large frying pan over medium heat. Saute onion, garlic and chili flakes for 2-3 mins, until tender. Let cool then combine with tuna, breadcrumbs, cilantro and egg. Season then shape into 4 patties.
- To make the avocado and corn salsa, combine all ingredients. Season to taste.
- Heat remaining oil over medium heat. Cook patties for 4-5 mins per side, until browned and cooked through. Place arugula on bottom buns. Top with a tuna patties, salsa and top buns. Serve.
