- 1 1/2 cups apple juice
- 1 tbsp minced garlic
- 1 1/2 tbsp Dijon mustard
- 1 1/2 tbsp balsamic vinegar
- 2 tbsp vegetable oil
- 6 None center cut bone-in pork chops, each 1 1/4 inch thick, at room temperature
- 1 1/2 tsp cornstarch, whisked with 1 tbsp cold water
- 1 tbsp chopped fresh thyme leaves
- 1 tbsp chopped fresh rosemary leaves
- Whisk together apple juice, garlic, mustard and vinegar. Set aside.
- Heat oil in a large heavy-bottomed frying pan over medium-high heat. Season pork then sear for 8 mins, turning once, or until cooked to your liking. Transfer to a serving platter to rest.
- Reduce heat to medium and deglaze pan with apple juice, scraping up any browned bits. Bring to a boil and cook until reduced by half. Add cornstarch slurry and boil for 1 min, until thickened. Stir in herbs. Return pork to pan and cook for 2 mins, turning once.
