Spicy Rice Noodles With Lamb And Bok Choy
- 16 oz fresh rice noodles
- 1 tbsp peanut oil
- 1 lb ground lamb
- 3 cloves garlic, crushed
- 2 None fresh small red Thai chili peppers, chopped finely
- 1 lb bok choy, sliced thinly
- 2 tbsp tamari soy sauce
- 1 tbsp fish sauce
- 2 tbsp soy sauce
- 4 None spring onions, sliced thinly
- 2 oz lightly packed fresh Thai basil leaves
- 1/2 lb beansprouts
- Place noodles in a medium heatproof bowl and cover with boiling water. Separate gently and drain.
- Heat the oil in a wok and stir-fry pork until browned. Add garlic and chili pepper and stir-fry until fragrant. Add noodles, bok choy and sauces and stir-fry until bok choy just wilts. Remove from heat and stir in spring onion, basil and beansprouts. Serve immediately.
