Orange Soufflé

  1. Preheat oven to 425u0b0F. Grease 6 small souffle dishes. Sprinkle bases and sides with 1 tbsp sugar, shaking out excess.
  2. In a small saucepan, melt butter over high heat. Add flour and cook for 1 min, stirring constantly. Whisk in milk until smooth. Add remaining sugar, vanilla and 1/4 tsp salt. Cook over low heat for 10 mins, stirring constantly, until mixture thickens. Let cool then whisk in egg yolks and liqueur. Whip egg whites to stiff peaks then fold in. Distribute between prepared souffle dishes and bake for 7 mins.
  3. Dust with powdered sugar and serve immediately.
