Fudgy Chocolate, Cherry And Coconut Cookies
- 8 tbsp (1 stick) butter, softened
- 3/4 cup firmly packed brown sugar
- 1 None egg
- 1 tsp vanilla extract
- 1 1/4 cups flour
- 1/4 cup self-rising flour
- 1/3 cup unsweetened cocoa powder
- 1/2 tsp baking soda
- 1/2 cup milk
- 6 oz semi-sweet chocolate, coarsely chopped
- 1/2 cup dried cherries, coarsely chopped
- Preheat the oven to 350u0b0F. Grease and line three baking pans with parchment paper.
- Beat butter, sugar, egg and vanilla extract in large bowl with electric mixer until smooth. Sift flours, cocoa powder and baking soda into medium bowl. Alternately beat flour mixture and milk into dough. Stir in chocolate and cherries.
- Drop level tablespoons of mixture, about 2 inches apart, on prepared pans. Press with fork to flatten slightly.
- Bake cookies about 10 mins. Cool in pans 5 mins. Remove from pans; cool completely on wire rack.
