Creamy Broccolini Pasta
- 14 oz rotini
- 1 bunch broccolini, coarsely chopped
- 3 tbsp butter
- 7 oz speck, chopped (can substitute bacon)
- 1 None large onion, cut into wedges
- 1 None long red chili, sliced
- 1 1/4 cups heavy cream
- 1 None lemon, juiced
- 2 tbsp dill, large stems discarded
- None None Shaved Parmesan, to serve
- Cook pasta according to package instructions, adding broccolini 1 minute before end of cooking time. Drain well.
- In large saucepan, melt butter on medium heat. Fry speck and onion 4-5 minutes, until golden and crisp. Add chili and cook another 1-2 minutes. Add cream and lemon juice. Simmer 1-2 minutes, until mixture thickens slightly.
- Add pasta and broccolini to sauce with dill, tossing to coat. Season to taste and serve with shaved Parmesan.
