Thin Peach Tart

  1. Combine flour and salt in bowl. Cut in margarine with pastry blender until mixture resembles coarse meal.
  2. Sprinkle with water and 1/4 teaspoon vanilla.
  3. Stir with fork until all dry ingredients are moistened.
  4. Shape dough into ball and press into lightly greased pie plate. Set aside. Combine peaches, apple juice, 1/2 teaspoon vanilla and 1 tablespoon brown sugar, tossing well. Arrange peaches in concentric circles on dough, starting 1-inch from edge.
  5. Sprinkle with 2 teaspoons brown sugar. Bake at 400u0b0 for 25 minutes or until golden and crisp.
