Black Forest Trifle
- 1 1/4 cups half and half
- 1 cup whole milk
- 5 None large egg yolks
- 1/3 cup sugar
- 1/2 tsp unflavored powdered gelatin
- 8 oz chocolate cookies

- 2/3 cup sugar
- 10 1/2 oz frozen pitted cherries
- 3 tsp unflavored powdered gelatin
- None None To Garnish
- 1 1/4 cups heavy cream, whipped to soft peaks
- 2 oz Dark chocolate, shaved (about 1/3 cup)
- In a saucepan combine cream and milk. Bring to boiling point on medium heat, stirring.
- In a bowl, whisk egg yolks and sugar together until thick and pale. Gradually add milk mixture in a thin stream, whisking constantly. Return to clean saucepan and heat, stirring, until almost boiling and thickened. Remove from heat.
- ln a small bowl, whisk gelatin into 2 tbsp boiling water briskly with a fork until dissolved. Whisk into custard.
- Arrange cookies in the bottom of a serving dish. Pour custard evenly over cookies and chill for 2 hours, until set.
- Meanwhile, to make cherry gelatin, combine sugar and 1 cup water in medium saucepan. Stir over medium heat until sugar dissolves. Add cherries and simmer gently for 2-3 mins, until tender. Remove from heat. ln a small bowl, whisk gelatin into 2 tbsp boiling water briskly with a fork until dissolved. Whisk into cherry mixture. Cool to room temperature.
- Pour gelatin over set custard. Chill for 2 hours, or until set. When ready to serve, spread whipped cream over gelatin and serve sprinkled with chocolate shavings.
