Chicken Tagine With Couscous

  1. Preheat the oven to 300u0b0F.
  2. Heat oil in a large oven-proof skillet on high heat. Brown chicken on all sides. Transfer to a plate. Add onion and garlic to skillet and saute 3-4 mins, until tender. Add ras el hanout and cook, stirring, 1-2 mins, until fragrant. Stir in stock, tomatoes and potatoes. Bring to a boil. Return chicken to skillet. Cover.
  3. Bake 1 hour. Add green beans, dates and olives. Cover and bake 15 mins longer. Stir in cilantro. Serve with couscous.
