Moules Marinieres - Mussels In White Wine

  1. Heat oil in a large skillet on medium heat. Saute onion and garlic for 2-3 mins, until onion is tender.
  2. Stir in wine and lemon juice. Bring to a boil. Reduce heat to low. Simmer for 2-3 mins until liquid has reduced by half.
  3. Stir in cream and season to taste. Bring to a boil. Reduce heat to low and simmer for 3-5 mins until sauce thickens slightly.
  4. Add mussels, stirring to coat with sauce. Simmer, covered, for 3-5 mins, until mussels open (discard any unopened ones). Stir in parsley.
  5. Serve mussels with bread for dipping.
