Swirl Meringues
- 4 None egg whites
- 1 cup sugar
- 1 tsp vanilla extract
- 1 tsp white vinegar
- 1 tsp cornstarch
- None None Food color, pink and yellow
- Preheat the oven to 300u0b0F. Line 2 baking pans with parchment paper.
- Beat egg whites in a large, clean bowl with an electric mixer until soft peaks form. Gradually add sugar, 1 tbsp at a time, beating until sugar dissolves and mixture is stiff, thick and glossy. Beat in vanilla, vinegar and cornstarch.
- Divide meringue into two bowls. Sprinkle drops of pink food color over mixture in one bowl. Repeat with yellow food color in remaining mixture.
- Using a tablespoon, scoop out individual meringues and place 2 inches apart on prepared pans (food color will swirl through mixture as you scoop).
- Bake 45 mins. Reduce oven temperature to 250u0b0F. Bake 40-45 mins. Cool in a turned-off oven, with the door ajar, to allow meringues to dry out completely.
