Almond, Pine Nut And Grape Cake
- 1 2/3 cups self-rising flour
- 1/3 cup all-purpose flour
- 1 1/4 cups ground almonds
- 3/4 cups granulated sugar
- 1/2 cup sweet sherry
- 4 None large eggs, beaten lightly
- 3/4 cup butter, melted
- 1 tbsp finely grated lemon zest
- 6 oz small seedless red grapes
- 2 tbsp pine nuts
- 4 oz marzipan, chopped finely
- None None Sherry Mascarpone
- 9 oz mascarpone
- 2 tsp powdered sugar
- 2 tbsp sweet sherry
- 2 tsp powdered sugar, for dusting
- Preheat oven to 325u0b0F. Grease a deep 9 inch springform pan and line base and side with parchment paper.
- Sift flour into a large bowl. Stir in ground almonds and sugar. Whisk together sherry, eggs, butter and lemon zest then mix into dry ingredients until combined. Transfer to prepared pan and sprinkle with grapes, pine nuts and marzipan. Bake for 45 mins, until a skewer inserted in the center comes out clean. Let cool in pan for 15 mins then transfer to a wire rack to cool slightly.
- Meanwhile, to make the sherry mascarpone, mix together all ingredients in a small bowl.
- Dust warm cake with powdered sugar. Serve with sherry mascarpone.
