Almond, Pine Nut And Grape Cake

  1. Preheat oven to 325u0b0F. Grease a deep 9 inch springform pan and line base and side with parchment paper.
  2. Sift flour into a large bowl. Stir in ground almonds and sugar. Whisk together sherry, eggs, butter and lemon zest then mix into dry ingredients until combined. Transfer to prepared pan and sprinkle with grapes, pine nuts and marzipan. Bake for 45 mins, until a skewer inserted in the center comes out clean. Let cool in pan for 15 mins then transfer to a wire rack to cool slightly.
  3. Meanwhile, to make the sherry mascarpone, mix together all ingredients in a small bowl.
  4. Dust warm cake with powdered sugar. Serve with sherry mascarpone.
