Scotch Eggs
- 7 None eggs, at room temperature, 1 whisked
- 1/2 cup all-purpose flour
- 1/2 cup dried breadcrumbs
- 6 None beef sausages, casings removed, shaped into 6 flat ovals
- None None mixed greens, to serve
- -1 None Sweet Chili and Herb Mayonnaise
- 1/3 cup mayonnaise
- 1 tbsp sweet chili sauce
- 1 tbsp chopped fresh chives
- To hard boil the eggs, place 6 eggs in a saucepan and cover with water. Bring water to a boil over medium heat. Once the water reaches a boil, remove from heat. Let eggs sit in hot water for 12 mins, drain then run under cold water. Peel.
- Coat hard-boiled eggs lightly in flour. Mold ground sausage around outside of eggs then dip in whisked egg and coat in breadcrumbs. Place on a large plate, cover with plastic wrap and chill for 15 mins.
- Meanwhile, to make sweet chili and herb mayonnaise, combine mayonnaise, chili sauce and chives in a small bowl. Whisk in 1 1/2 tbsp warm water.
- Heat oil in a medium heavy-bottomed saucepan over medium heat to 350u0b0F. Working in batches, deep-fry eggs for 5-6 mins, or until golden brown and cooked through. Drain on paper towels. Cut eggs in 1/2. Serve immediately with mayonnaise and salad.
