Prosciutto-Wrapped Turkey Breast
- 2 1/2 lbs turkey breast (thawed, if frozen)
- 6 slices prosciutto
- 4 None pears, cored and cut into wedges
- 1 tbsp light brown sugar
- 2 tbsp extra virgin olive oil
- 1/2 cup verjuice or white wine
- 2 tbsp butter, chopped
- Preheat the oven to 400u0b0F. Wrap turkey breast with the prosciutto. Sprinkle with salt and pepper.
- Place in oiled baking pan; cover tightly with foil. Roast for 40 mins.
- Meanwhile, combine pears, sugar and 1 tbsp oil in a medium bowl
- Brush turkey all over with the remaining olive oil. Increase oven to 425u0b0F. Add pears to baking pan with the turkey. Roast for a further 35 mins or until turkey is cooked through and pears are browned and tender.
- Remove turkey and pears from baking pan. Let stand, loosely cover with foil, for 10 mins. Add verjuice to pan; cook, stirring, on high heat, for about 1 min or until thickened slightly. Remove from heat. Add butter, stirring until combined.
- Serve sliced turkey with pears and sauce.
