Lamb Kofta With Cucumber Salad

  1. Combine ground lamb, onion, garlic, 1/3 cup mint, cumin, cinnamon, cloves, allspice, and lemon peel and juice in a large bowl. Season with salt and pepper. Form 1/4 cupfuls of mixture into sausage shapes. Thread onto skewers and place on a large plate.
  2. Heat 1 tbsp of the oil in a large skillet or grill pan on medium heat. Cook and turn skewers for 5 mins or until cooked through.
  3. Meanwhile, cut cucumber in half lengthwise. Using a small teaspoon, remove and discard seeds. Thinly slice cucumber and place in a medium bowl. Cut tomatoes in half; remove and discard seeds and pulp. Finely chop tomato. Add tomato to cucumber with red onion, 1/2 cup mint leaves and remaining oil. Toss until well combined. Season with salt and pepper.
  4. Serve kofta with salad, flatbread and hummus.
