Spaghetti With Salami And Zucchini
- 1 lb spaghetti
- 1 tbsp vegetable or olive oil
- 2 cloves garlic, crushed
- 1 None red onion, halved, thinly sliced
- 2 None zucchini, coarsely grated
- 7 oz salami, finely shredded
- 3/4 cup freshly grated parmesan
- None None mixed salad, to serve
- Cook pasta in a pot of boiling salted water for 10 minutes or until tender. Drain, reserving a 1/3 cup of the cooking liquid. Return pasta to the pot.
- Meanwhile, heat oil in a frying pan over high heat. Add garlic, onion and zucchini and cook 3 minutes or until soft. Add salami and cook and stir 2 minutes or until heated.
- Add zucchini mixture, half the parmesan and the reserved cooking liquid to hot pasta in the pot and toss to combine. Season with salt and pepper. Divide pasta among serving bowls, sprinkle with remaining parmesan. Serve with salad.
