Amaretto Chocolate Cream Pie
- 1 c. sugar
- 1/3 c. cornstarch
- 1/4 tsp. salt
- 4 egg yolks
- 2 3/4 c. milk
- 2 (1 oz.) sq. unsweetened chocolate, chopped
- 1/4 c. Amaretto
- 2 tsp. vanilla
- 1 (9-inch) pastry shell, baked
- 1 c. whipping cream
- 1 Tbsp. Amaretto
- 1/4 c. sifted powdered sugar
- Combine first 4 ingredients in heavy saucepan; stir well. Gradually stir in milk; add chocolate.
- Cook over medium heat, stirring constantly until mixture thickens and reaches 160u0b0. Remove from heat.
- Stir in 1/4 cup Amaretto and vanilla.
- Pour into pastry shell.
- Place a piece of plastic wrap directly on top of filling.
- Chill 8 hours.
- Combine whipping cream, 1 tablespoon Amaretto and powdered sugar.
- Beat until soft peaks form.
- Remove plastic wrap and spread mixture on pie.
