Caramel Apple Squares

  1. Preheat oven to 350u0b0F. Grease an 8x12 inch rectangular baking pan. Line base and long sides with parchment paper, extending paper 2 inches over sides.
  2. To make the caramel apples, melt butter in a large frying pan over medium heat. Add sugar and apples. Cook, stirring occasionally, for 5 mins, or until apple is lightly caramelized. Remove from heat and let cool for 20 mins. Transfer apples to a medium bowl. Reserve caramel sauce in frying pan.
  3. Roll puff pastry out until large enough to line base of prepared pan then use to line pan, trimming edges. Chill for 20 mins.
  4. Beat butter and sugar until light and fluffy. Beat in eggs, 1 at a time. Stir in ground almonds, flour and lemon zest. Transfer to prepared pan and top with caramel apples. Bake for 30 mins. Let cool in pan then cut into squares.
  5. Reheat caramel sauce and drizzle over apples before serving.
