Caramel Apple Squares
- 1 sheet frozen puff pastry, thawed
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 None large eggs
- 1 cup ground almonds
- 1/4 cup all-purpose flour, sifted
- 1 tsp lemon zest
- 4 1/2 tbsp unsalted butter
- 1/3 cup raw sugar
- 1 lb apples, peeled, quartered, cored, thinly sliced
- Preheat oven to 350u0b0F. Grease an 8x12 inch rectangular baking pan. Line base and long sides with parchment paper, extending paper 2 inches over sides.
- To make the caramel apples, melt butter in a large frying pan over medium heat. Add sugar and apples. Cook, stirring occasionally, for 5 mins, or until apple is lightly caramelized. Remove from heat and let cool for 20 mins. Transfer apples to a medium bowl. Reserve caramel sauce in frying pan.
- Roll puff pastry out until large enough to line base of prepared pan then use to line pan, trimming edges. Chill for 20 mins.
- Beat butter and sugar until light and fluffy. Beat in eggs, 1 at a time. Stir in ground almonds, flour and lemon zest. Transfer to prepared pan and top with caramel apples. Bake for 30 mins. Let cool in pan then cut into squares.
- Reheat caramel sauce and drizzle over apples before serving.
