Passionfruit Melting Moments
- 3 None passionfruit, pulp scooped out and pressed through a fine-mesh strainer, pulp and 1 tbsp juice reserved
- 1 cup butter, softened
- 1 tsp vanilla extract
- 1/2 cup powdered sugar, sifted
- 1 3/4 cups all-purpose flour, sifted
- 2/3 cup cornstarch, sifted
- -1 None Passionfruit Buttercream
- 6 1/2 tbsp butter, softened
- 2/3 cup powdered sugar, sifted, plus extra to dust
- Preheat oven to 325u0b0F. Line 3 baking trays with parchment paper.
- Beat butter, vanilla and powdered sugar until pale. Stir in flour and cornstarch in 2 batches. Stir in passionfruit pulp. With lightly floured hands, roll 2 level tsp of mixture into balls and place on baking trays about 1 inch apart. Dip a fork into a little extra flour and use to flatten cookies. Bake for 15 mins, or until cookies are a pale straw color. Let cool on trays for 5 mins then transfer to wire racks to cool completely.
- To make the passionfruit buttercream, beat butter and powdered sugar until pale and fluffy. Beat in 1 tbsp reserved passionfruit juice.
- Sandwich cookies together with 1 tsp passionfruit buttercream. Dust with powdered sugar.
