Veal Parmesan

  1. Whisk together milk and egg. Place breadcrumbs on a plate. Toss veal in flour to coat. Dip each piece of veal in milk mixture then toss in breadcrumbs to coat.
  2. Preheat broiler. Heat oil in a large frying pan over high heat. Cook veal for 1 min per side, or until golden. Drain on paper towels. Place on a baking tray and top with Napoletana sauce, oregano and cheese. Broil for 2-3 mins, or until golden brown.
  3. Serve with arugula and lemon wedges.
