Veal Parmesan
- 1/4 cup milk
- 1 None large egg, lightly beaten
- 1 3/4 cups soft fresh breadcrumbs
- 4 (3.5 oz) veal steaks
- 1/4 cup flour
- 1/3 cup olive oil
- 1/2 cup Napoletana sauce
- 2 tbsp fresh oregano leaves, finely chopped
- 1 1/2 oz grated Parmesan cheese
- None None baby arugula, to serve
- None None lemon wedges, to serve
- Whisk together milk and egg. Place breadcrumbs on a plate. Toss veal in flour to coat. Dip each piece of veal in milk mixture then toss in breadcrumbs to coat.
- Preheat broiler. Heat oil in a large frying pan over high heat. Cook veal for 1 min per side, or until golden. Drain on paper towels. Place on a baking tray and top with Napoletana sauce, oregano and cheese. Broil for 2-3 mins, or until golden brown.
- Serve with arugula and lemon wedges.
