Sweet Fried Ravioli

  1. Mix the ricotta cheese, orange zest and candied fruit. Divide the puff pastry in 2 and roll out each portion into a 12 x 13 inch rectangle. Place 16 small dollops of the ricotta cheese mixture onto 1 sheet of puff pastry, brush with beaten egg, lay the other sheet over top, seal around the edges of the ricotta and cut out with a pastry cutter about 2 1/2 inches in diameter, pressing the edges together so they are sealed well. Re-roll the pastry and repeat until it has all been used.
  2. Heat the oil in a large pot and carefully fry the "raviolis" a few at a time for 3-5 mins until golden brown. Remove with a slotted spoon and drain on paper towels. Dust with powdered sugar and serve.
