Rosewater And Turkish Delight Meringues
- 4 None large egg whites, at room temperature
- 1 cup granulated sugar
- 2 tsp cornstarch
- 1 tsp white vinegar
- 2 tsp rosewater
- 3.5 oz Turkish delight, finely chopped
- 1/4 cup unsalted pistachios, finely chopped
- None None powdered sugar, to dust
- Preheat oven to 250u0b0F. Grease and line a baking tray with parchment paper.
- Whip egg whites to soft peaks. Gradually add sugar, beating well after each addition, until sugar dissolves and mixture is thick, glossy and firm peaks form.
- Fold cornstarch, vinegar, rosewater and Turkish delight into meringue until just combined. Drop heaped tablespoons onto prepared tray to form 12 in total. Sprinkle with pistachios then bake for 30 mins, or until meringue feels firm and dry to the touch. Turn off oven and let meringues cool in oven.
- Serve meringues dusted with powdered sugar.
