Stuffed Artichokes
- 1/2 c. virgin olive oil
- 2 large cloves garlic, chopped fine
- 1 large shallot, chopped fine
- 1 medium onion, chopped fine
- 1 c. fresh chopped parsley
- 1 c. sliced celery
- 3 c. Italian bread crumbs
- 1/2 c. Parmesan cheese, freshly grated
- 1/4 c. Romano cheese, freshly grated
- 1/4 tsp. fresh ground pepper
- salt to taste
- 1 c. white cooking wine
- 4 large artichokes
- Add olive oil to large heated pan.
- Add garlic, shallot, onion, parsley and celery.
- Saute until celery is almost tender.
- Remove from heat.
- Add bread crumbs, Parmesan cheese, Romano cheese, pepper and salt.
- Mix. Olive oil may be added if too dry.
