Berry Jam And Vanilla Palmiers
- 1/2 cup sliced almonds, chopped very finely
- 1 tsp vanilla bean paste
- 1 tsp finely grated orange peel
- 2/3 cup berry jam
- 2 sheets frozen puff pastry, thawed
- 2 tbsp granulated sugar
- Combine almonds, paste, orange peel and jam in a small bowl.
- Spread jam mixture evenly over pastry sheets. Working with one sheet at a time, fold two opposite sides of pastry inwards to meet in the middle; flatten slightly. Repeat fold again and flatten slightly. Fold again so the outside edges of pastry meet.
- Roll pastry in sugar, then wrap, separately, in plastic wrap. Freeze 30 mins or until slightly firm.
- Preheat the oven to 350u0b0F. Line baking pans with parchment paper.
- Unwrap pastry. Cut pastry into 1/3 inch-thick slices. Place slices, cut-side up, 2 inches apart on prepared pans.
- Bake palmiers for 20 mins or until puffed and golden. Cool in pans on wire rack. Store palmiers in an airtight container for up to 3 days.
