Stir-Fried Tiger Prawns With Asparagus And Sesame
- 2 tsp canola oil
- 2 bunches green asparagus, trimmed, sliced into 1 inch pieces
- 4 sprigs fresh cilantro, with roots attached, chopped + extra leaves, to serve
- 3 inches fresh ginger, finely chopped
- 2 1/4 lb tiger prawns, peeled, deveined
- 2 cloves garlic, finely chopped
- 1 None red chili, deseeded, thinly sliced
- 1 tbsp sesame oil
- 1 tbsp sesame seeds, toasted
- 1 None lime, juiced + extra wedges, to serve
- None None steamed rice, to serve
- Heat a wok or large frying pan over high heat, add oil and swirl to coat. Add asparagus, chopped cilantro and ginger. Stir-fry for 1 min. Add prawns, garlic and chili and stir-fry for 3-4 mins, tossing. Add sesame oil, sesame seeds and lime juice. Garnish with cilantro leaves. Serve with lime wedges and steamed rice.
