Christmas Cake #1
- 6 oz. or 1 1/2 c. flour
- 8 oz. margarine or butter
- 8 oz. sugar
- 4 eggs
- 1 lb. raisins
- 1 tsp. cinnamon
- 1/2 tsp. mixed spice
- 1/2 tsp. salt
- 4 oz. mixed peel
- 4 oz. cherries
- 1/2 lb. prunes, chopped
- 1 c. wine
- 1 tsp. baking powder
- 1 tsp. vanilla
- finely grated rind of 1 lemon
- 2 Tbsp. browning
- Cream butter, sugar and browning until soft and fluffy.
- Sieve all dry ingredients together.
- Beat eggs, sherry, brandy or milk together.
- Add egg mixture to creamed butter and sugar.
- Add fruits.
- Fruits should be lightly floured, if sticky.
- Add flour and fold in.
- Do not overbeat when mixing.
- Bake at 350u0b0 for 1 1/2 hours or steam for 2 hours.
- Yields a 9-inch round or 8-inch square cake.
