Hearty Goulash Soup
- 2 tbsp oil
- 750 g stewing beef, diced
- 2 None onions, peeled and sliced
- 200 g button mushrooms, halved
- 3 None mixed peppers, deseeded and diced
- 250 g waxy potatoes, peeled and diced
- 2 tbsp tomato puree
- 2 tbsp plain flour
- 2 tsp paprika
- 1.25 litres vegetable stock
- 125 ml red wine
- 4 tbsp chopped fresh parsley, to garnish
- Heat the oil in a large saucepan, add the meat in 2 batches and brown for 3-4 mins, turning. Add the onions, mushrooms, peppers, potatoes, and tomato paste and the browned meat to the pan and mix together.
- Sift in flour over the contents of the pan and saute for 1-2 mins. Mix in the paprika and season. Pour in the stock and wine and bring to a boil. Cover and simmer for 50 mins-1 hour. Sprinkle with parsley before serving.
