Peanut Beef Noodle Stir-Fry
- 7 oz dried rice stick noodles
- 1 tbsp vegetable or peanut oil
- 3 cloves garlic, crushed
- 2 tsp grated fresh ginger
- 1 1/4 lbs ground beef
- 1/4 cup thick sweet soy sauce
- 2 tbsp soy sauce
- 1 tbsp sweet chili sauce
- 1 bunch (12 oz) baby bok choy, coarsely chopped
- 4 None green onions, thinly sliced on the diagonal
- 1/2 cup finely chopped peanuts
- Soak noodles in boiling water in a large bowl for 5 mins, stirring to separate strands. Drain. Rinse under cold water. Drain.
- Heat oil in a wok or large skillet on high heat. Add garlic and ginger. Stir-fry 1 min. Add ground beef, stir-fry, breaking up lumps, 5 mins or until browned.
- Mix sauces in a small bowl. Add 1/3 of the sauce mixture to the wok. Stir-fry 1 min. Add bok choy and green onions. Stir-fry 1 min or until tender. Add noodles with remaining sauce mixture. Stir-fry 2 mins or until heated through. Spoon into serving bowls. Serve sprinkled with peanuts.
