Asparagus, Pea And Lemon Pilaf
- 2 tsp olive oil
- 1 None small Spanish onion, finely chopped
- 1 clove garlic, minced
- 7 oz basmati rice
- 1 cup chicken stock
- 2 tsp lemon zest
- 12 oz asparagus, trimmed, cut into 1 inch pieces
- 4 oz frozen peas
- 1 None lemon, cut into wedges
- 1 None medium lemon (140g), cut into wedges
- Heat oil in a medium saucepan over medium heat. Cook onion and garlic, stirring, until onion softens. Add rice and cook, stirring, for 1 min. Stir in 1 cup water, stock and lemon zest. Bring to a boil then reduce heat and simmer, covered, for 10 mins. Add asparagus and peas and simmer, covered, for 5 mins, or until rice is just tender. Remove from heat and let stand, covered, for 5 mins. Season to taste.
- Serve pilaf with lemon wedges.
