Asparagus, Pea And Lemon Pilaf

  1. Heat oil in a medium saucepan over medium heat. Cook onion and garlic, stirring, until onion softens. Add rice and cook, stirring, for 1 min. Stir in 1 cup water, stock and lemon zest. Bring to a boil then reduce heat and simmer, covered, for 10 mins. Add asparagus and peas and simmer, covered, for 5 mins, or until rice is just tender. Remove from heat and let stand, covered, for 5 mins. Season to taste.
  2. Serve pilaf with lemon wedges.
