Gnocchi With Roast Asparagus
- 1 None small red onion, thinly sliced
- 1 tbsp red wine vinegar
- 2 bunches green asparagus, woody stems removed, cut into thirds
- 2 tbsp extra virgin olive oil
- 18 oz fresh gnocchi
- 1/3 cup pine nuts, lightly toasted
- None None shaved Parmesan cheese, to serve
- Preheat oven to 450u0b0F.
- In a small bowl, combine onion and vinegar. Set aside for 20 mins, or until onion is bright red.
- Toss asparagus in oil and season to taste. Arrange, in a single layer, in a baking dish. Roast for 10-12 mins, or until just tender.
- Meanwhile, cook gnocchi following package instructions then drain well. Mix asparagus in baking dish and bake for another 2 mins.
- Serve gnocchi and asparagus on warm serving plates. Sprinkle with pine nuts, Parmesan and pickled onions.
