Potato Cake
- 2 c. sugar
- 1 c. butter
- 1 c. Irish potatoes, creamed
- 1/2 c. sweet milk
- 2 c. flour
- 1 c. raisins, cooked
- 4 eggs, well beaten
- 3 Tbsp. cocoa
- 1 Tbsp. cloves
- 1 Tbsp. allspice
- 1 Tbsp. cinnamon
- 1 Tbsp. nutmeg
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 1 c. chopped pecans
- 1/2 c. cherries, chopped
- Cream butter and sugar; add the well beaten eggs; mix well, then add the creamed potatoes.
- Mix well.
- In a separate bowl, sift together flour, baking powder, salt, cocoa, cloves, allspice, nutmeg and cinnamon.
- Add this sifted mixture and milk a little at a time to the mixture of butter, sugar and eggs.
- After this mixture is mixed well, add the nuts and cherries.
- Bake for approximately 1 hour at 375u0b0.
- Test with toothpick to determine when done.
- This cake can be made in a loaf or in layers (I prefer layers).
