Smoked Trout Salad

  1. Break vermicelli into a large heatproof bowl. Cover with boiling water. Set aside for 5 mins until tender. Drain well. Place in a serving bowl to cool.
  2. For the dressing, whisk all ingredients in a small bowl. Set aside.
  3. Add trout, cucumber, carrot, radish and herbs to noodles. Drizzle with dressing; toss to combine. Sprinkle with nuts to serve.
