Smoked Trout Salad
- 4 oz rice vermicelli
- 2 oz sliced smoked trout
- 1 small cucumber, cut into matchsticks
- 1 small carrot, cut into matchsticks
- 6 small radish, trimmed and thinly sliced
- 1/2 cup mint leaves
- 1/2 cup cilantro leaves
- None None Ground peanuts, to serve
- None None FOR THE DRESSING
- 1/2 cup lime or lemon juice
- 1 tbsp brown sugar
- 1 tbsp fish sauce
- 2 tsp sesame oil
- 2 tsp sambal oelek (Indonesian ground chili paste)
- Break vermicelli into a large heatproof bowl. Cover with boiling water. Set aside for 5 mins until tender. Drain well. Place in a serving bowl to cool.
- For the dressing, whisk all ingredients in a small bowl. Set aside.
- Add trout, cucumber, carrot, radish and herbs to noodles. Drizzle with dressing; toss to combine. Sprinkle with nuts to serve.
