Cinnamon Flan
- 1 cup sugar
- -1 None Custard
- 2 1/2 cups milk
- 1 1/4 cups heavy cream
- 2 None cinnamon sticks
- 2 None whole cloves
- 4 None large eggs, beaten lightly
- 2 None large egg yolks
- 1/3 cup granulated sugar
- 2 tsp vanilla extract
- Preheat oven to 325u0b0F. To make the caramel, combine sugar and 1/2 cup water in a small heavy-bottomed saucepan. Stir over medium heat, without boiling, until sugar is dissolved. Bring to a boil. Boil, without stirring, until golden brown. Pour into an 8 inch round cake pan, tilting pan to coat base.
- For the custard, bring milk, cream and spices to a boil in a medium saucepan. Remove from heat and let stand, covered, for 15 mins. Discard spices.
- Combine eggs, egg yolks, sugar and vanilla in a bowl. Gradually whisk in milk mixture until just combined. Strain into cake pan over caramel. Place pan in a deep baking dish with enough boiling water to come halfway up sides of pan. Bake for 50 mins, or until custard is just set.
- Remove pan from water and let cool. Cover flan and refrigerate overnight.
