Tuna Mornay
- 2 1/2 tbsp butter
- 1 None medium Spanish onion, finely chopped
- 1 stalk celery, trimmed, finely chopped
- 1 tbsp flour
- 3/4 cup milk
- 1/2 cup heavy cream
- 1/3 cup grated Cheddar cheese, plus 1/4 cup
- 4 oz canned sweet corn, rinsed, drained
- 1 (14 oz) can tuna, drained
- 3/4 cup stale breadcrumbs
- Preheat oven to 350u0b0F.
- Melt butter in a medium saucepan over medium heat. Cook onion and celery, stirring, until onion is soft. Add flour and cook, stirring, for 1 min. Gradually stir in milk and cream. Cook, stirring, until mixture boils and thickens. Remove pan from heat and mix in 1/3 cup cheese, corn and tuna. Stir until cheese is melted.
- Spoon into 4 (13 oz) ramekins then sprinkle with breadcrumbs and remaining cheese. Bake for 15 mins, or until heated through. Serve.
