Sweet Corn Quesadillas With Tomato And Avocado Salsa
- 1 can (15 oz) whole kernel corn
- 1 None red pepper, seeded and finely chopped
- 1/2 cup grated Cheddar cheese
- 1 None red chili pepper, seeded and finely chopped
- 8 None flour tortillas
- None None Olive oil, for brushing
- None None FOR THE SALSA
- 1 None avocado, peeled, pitted and chopped
- 1 None tomato, finely chopped
- 1/3 small red onion, finely chopped
- 1/2 cup coarsely chopped cilantro, plus additional leaves, for garnish
- 1 tbsp lemon juice
- Combine corn, pepper, cheese and chili pepper in large bowl. Mix well.
- Lightly brush (or spray) a tortilla with oil. Place oiled side down on a board. Cover half the tortilla with one-eighth of the corn mixture. Fold over to enclose. Repeat with remaining tortillas and corn mixture.
- For the salsa, combine all ingredients in a bowl and season to taste.
- Heat a grill pan or large skillet on medium heat. Carefully place a tortilla in the pan. Cook for 1-2 mins each side, until golden brown and the cheese has melted. Repeat with remaining tortillas.
- Cut into wedges and garnish with cilantro leaves. Serve warm with salsa.
