Cheese And Ham Souffle

  1. Preheat the oven to 350u0b0F. Grease two 1 1/2-cup baking dishes. Sprinkle breadcrumbs over bottom and sides. Tip out excess crumbs.
  2. Melt butter in a small saucepan on low heat. Cook onion for 1-2 mins or until softened. Add flour; cook, stirring, for 1 min. Remove from heat. Gradually whisk in milk until mixture is smooth. Return to heat; cook, stirring, on medium heat until mixture boils and thickens. Transfer to a large heatproof bowl. Cool slightly.
  3. Stir cheeses, ham, mustard, egg yolks and chives into milk mixture. Season with salt and white pepper.
  4. Using an electric mixer, beat egg whites to stiff peaks in a small bowl. Fold into cheese mixture in 2 batches. Spoon into prepared dishes. Place dishes on a baking pan. Run thumb gently around inside rim of dish.
  5. Bake for 30-35 mins or until well risen and golden. Serve immediately with mixed green salad.
