Potato Hash With Bacon, Sausage And Egg
- 1 lb new potatoes, diced
- 3 tbsp olive oil
- 2 None raw sausages, casings removed
- 2 strips smoked bacon, cut into strips
- 2 tbsp butter
- 1 None red onion, peeled and thinly sliced
- 5 sprigs thyme
- 2 None tomatoes, diced
- 1/4 bunch chives, finely chopped
- 2 None eggs
- Cook the potatoes in boiling salted water for 10 mins. Heat 1 tbsp of oil in a frying pan and fry the sausage and bacon for 5 mins, breaking the sausage into small pieces. Remove the meat from the pan.
- Heat the butter and 2 tbsp oil in the pan and saute the potatoes for about 15 mins, stirring occasionally. Add the onion and thyme, season to taste and fry for another 5 mins. Add the sausage pieces, bacon, diced tomatoes, and chives and fry for an additional 5 mins, stirring. Make 2 holes in the mixture and break the eggs into them. Cover, turn up the heat, and cook for 2-3 more minutes until the egg is set. Serve immediately.
