Old Fashioned Marsala Refrigerator Cake
- 1 3/4 cups heavy cream
- 1/3 cup powdered sugar
- 1 cup sweet marsala wine
- 24 None gingersnap cookies
- 3 oz semi-sweet chocolate, shaved into curls with a vegetable peeler
- Beat cream, powdered sugar and 1/4 cup of the marsala wine in a large bowl with an electric mixer until soft peaks form.
- Place the remaining marsala in a shallow bowl. Quickly dip one of the cookies into the marsala, then spread with a little of the cream mixture. Dip another cookie into the marsala and spread with cream. Sandwich the cookies together and repeat. Place joined cookies on a long, rectangular serving platter, standing upright. Repeat with remaining cookies and 1/2 the cream mixture to form a long log.
- Spread the remaining cream over the log. Cover and refrigerate for 6 hours.
- Sprinkle log with chocolate curls. To serve, cut on an angle into thick slices.
