Nordic Pepper Pot
- 10 oz lean beef, cut into pieces
- 10 oz pork, cut into pieces
- 10 oz lean lamb, cut into pieces
- 2 None leeks, sliced
- 9 oz carrots, peeled and sliced
- 15 None black peppercorns, crushed
- 15 None allspice peppercorns, crushed
- 3 cloves garlic, crushed
- 4-5 None bay leaves
- 3 cups vegetable stock
- 1 2/3 lb potatoes, peeled and thinly sliced
- None None parsley, for garnish
- Preheat oven to 325u0b0F. Put the meat, leeks and carrots into a greased baking dish. Add the peppercorns, allspice, garlic and bay leaf. Season with salt and pepper and pour over the stock. Mix well, cover and bake for about 2 1/2 hours, basting regularly.
- After 1 1/2 hours of cooking, remove form the oven and layer the potatoes on top. Season with salt and pepper and return to the oven, uncovered, for the final hour of cooking. Serve with a garnish of parsley.
