Steak Sandwiches With Béarnaise Sauce
- 2 None beef sirloin steaks
- 2 tbsp olive oil
- None None lettuce, sliced cooked beet, sliced cucumber, and sliced tomatoes, to serve
- 1/4 cup white wine vinegar
- 1/2 None onion, chopped
- 1 sprig fresh rosemary
- 2 None large egg yolks
- 12 tbsp butter, melted
- 4 None soft bread rolls
- None None French fries, to serve
- Heat a large frying pan over high heat. Brush beef with oil and season. Sear on both sides until medium rare, or until cooked to your liking. Let rest for 5 mins then slice into strips.
- Meanwhile, for the Bearnaise sauce, simmer vinegar, onion and rosemary until reduced to about 2 tbsp. Strain into a heatproof bowl along with egg yolks. Whisk over a double boiler until foamy and pale. Gradually whisk in melted butter until thick and creamy.
- Stuff rolls with steak, lettuce, beet, cucumber and tomatoes. Drizzle Bearnaise sauce over top and season. Serve with French fries.
