Spanish Style Omelette With Vegetables

  1. Cook potatoes in boiling salted water for 5 mins. Drain. Heat 5 tbsp olive oil in a large nonstick frying pan. Add the zucchini, pepper, onion and garlic and cook 8 mins until softened. Add the potatoes and stir to combine.
  2. Add remaining oil to pan. Season eggs and pour into pan with vegetables. Cook over low heat 10 mins, then sprinkle with half the herbs. Place under a hot broiler for 2-3 mins until set. Garnish with remaining herbs and serve with salad.
