Spanish Style Omelette With Vegetables
- 1 lb potatoes, peeled and thinly sliced
- 6 tbsp olive oil
- 1 None zucchini, halved lengthwise and sliced
- 1 None red pepper, seeded and chopped
- 1 None red onion, peeled and sliced
- 2 cloves garlic, peeled and crushed
- 6 None large eggs, beaten
- 2-3 tbsp Mediterranean herbs, freshly chopped
- None None tomato and basil salad, to serve
- Cook potatoes in boiling salted water for 5 mins. Drain. Heat 5 tbsp olive oil in a large nonstick frying pan. Add the zucchini, pepper, onion and garlic and cook 8 mins until softened. Add the potatoes and stir to combine.
- Add remaining oil to pan. Season eggs and pour into pan with vegetables. Cook over low heat 10 mins, then sprinkle with half the herbs. Place under a hot broiler for 2-3 mins until set. Garnish with remaining herbs and serve with salad.
